The turquoise fork points on the map are always "Sound Catcher" stages. At the end of a "Sound Catcher" stage (that forks), the music will die out and you'll hear two different sounds, one to your left and one to your right. Grab the left sound to take the left path and the right sound to take the right path. The sound itself represents the minigame on the path it leads to (honking car horns for instance lead to "Sound Chase").

So, basically, to try each one once, you just need to start from the beginning and take a left then all rights, then go back to the beginning and take a right then all lefts.
