Something I haven't played is the of role-playing games, but it's looks to be surprisingly well-liked.

I guess the Project Diva (Vocaloid rhythm games) count as licensed? I'm gonna say those, they're pretty great. Even if you don't care about Vocaloid there's a pretty solid rhythm game mechanic in there.
